Deviled Crab

1 lb. fresh crabmeat, lump, claw or white
1 cup Saltine or Ritz crumbs
3/4 cup chopped celery
2 tbls. chopped onion
1/4 cup chopped fresh parsley
2 tbls. chopped bell pepper
2/3 cup melted butter
1/2 cup whipping cream
1/4 cup Creole Mustard
1/2 tsp. salt or to taste
1 tsp. dry mustard or more to taste
Cayenne to taste
White pepper to taste


1. Chop vegetables very finely. Make cracker crumbs from Saltines or Ritz or try Derek's Panko Crumbs. I haven't with this but will!

2. In medium bowl, gently mix crabmeat with cracker crumbs and chopped vegetables.

3. Add butter and cream.

4. Season with salt, dry mustard, Creole Mustard, cayenne and white pepper. Taste and correct seasoning if desired.

5. Bake in greased 1 1/2-quart baking dish or individual ramekins. Bake at 350 degrees for 30-40 minutes
