Can't wait to cook up the lobsters we're going to catch this weekend.

Just follow the Swazi method. I would suggest to set the steam time a little less.
It's all in the prep!!

Good luck on the buggin. One of these days I will need to see how it is done.

Tim cooked some tails for us last year during a weekend WSB trip with the boys.
They were great.
I'm looking forward to cooking some Sunday.

I usually always bar-b-que tails, but the "Swazi system" is preferred.
How do you guys cook your tails?

BBQ in the shell split. Sprinkle with Tony Chacheres and butter.

Once in a while I'll deep fry em.

That should be against the law....the tails and beef....to good for most folks.....nice range.

LOL! Wait until you see the crab leg/shrimp/scallop spread. Roasted red potatoes and ceasar salad.


We go slummin every once in awhile! The range is a Capital. Bill got that one for me for Christmas. I have wanted a professional range since watching Julia Child in the 60's.
